Authentic Madras Beef Curry

Serves: 6 People

Ingredients

  • 675grms Chuck or Shin Cut into 2.5cm Cubes
  • 2tbsp Oil
  • 2 Medium Onions, Peeled and sliced
  • 2 Garlic cloves, peeled and crushed
  • 1x 2.5cm piece of fresh ginger, peeled and grated
  • 1tsp Ground Tumeric
  • 2 tsp Garam Masala
  • 1 tsp Ground Cumin
  • 1tsp dried chilli flakes or hot pepper sauce
  • 1 x 400g can of chopped tomatoes
  • 400ml Good Hot Beef Stock
  • Natural Yogurt to garnish
  • Small handfull of fresh chopped coriander leaves to garnish (optional)

Method

  • Heat the oven to 180C/160Cfan/ Gas Mark 4

 

  • Heat the oil in a large heat proof dish with a lid and cook the onion, garlic, ginger and spices together for 3-4mins stirring occasionally

 

  • Add the beef and cook for 2-3 mins until slightly coloured.  Add the remaining ingredients except the garnish.

 

  • Bring to the boil, cover and cook in the oven for 2 - 2 hrs 30 mins or 3hours if using Shin until the beef is tender, stirring occasionally, season if required.

 

  • Garnish with the yogurt and coriander (if Using) and serve with Rice or Naan breads.
Tips

If you prefer a milder curry then omit or reduce the chilli flakes or hot sauce to your taste.  This recipe also works really well in the slow cooker, just follow the steps and where it says to put it in the oven just pop it all in the slow cooker put it on low for the day and your curry will be ready when you get home.
