Steak Salad with Pastrami Spices and Buttermilk

Serves: 2 People (if you want to make more just increase the quantities as needed)

Ingredients

  • 2 thin cut steaks
  • 2 baby cos lettuces, roughly torn

For the Pastrami

  • 2tsp sea salt
  • 1tsp ground paprika
  • 2tsp coriander seeds
  • 1tsp black peppercorns
  • 1tsp yellow mustard seeds
  • 2tsp brown sugar
  • 2 garlic cloves peeled & finely sliced
  • 2tbsp oil

For the Buttermilk Dressing

  • 3 ½fl oz. buttermilk
  • 4tbsp mayonnaise
  • 1 shallot, finely chopped
  • 3tbsp chopped chives
  • 3tbsp chopped flat leaf parsley

Method

  • To prepare the pastrami spices; put all the ingredients except the garlic and oil into a blender and whizz to form a rough powder. Alternatively use a pestle and mortar.

 

  • Transfer the powder to a bowl and add the garlic and oil.  Rub the spice mix all over the steaks, cover and refrigerate for at least 2 hours or if you can overnight.  Remove the steaks from the fridge an hour before cooking.

 

  • To prepare the dressing; in a bowl whisk the buttermilk into the mayo, then stir through the shallot and herbs, season, cover and chill until needed.

 

  • Heat a large non-stick frying pan and cook the steaks for 1-2 mins on each side or put the steaks onto a pre-lit BBQ.  Transfer to a clean plate, cover and leave them to rest for 5 mins.  Thinly slice the steaks

 

  • Put the lettuce in a salad bowl, add the steak and the dressing, toss gently and serve with crusty bread.
