Greek Style Pork Skewers

Serves: 4 People

Ingredients

  • Pork Loin Steaks, cubed
  • 2 Lemons
  • 1 Tbsp of Oregano
  • 2 Small red onions
  • 12 Cherry Tomatoes
  • 1 Tbsp Oil

To Serve

  • 500g Baby New Potatoes, Halved
  • 200g of Tzatiki
  • 15g Fresh Mint Leaves
  • 8 wooden Kebabs Skewers or 4 large metal skewers

Method

  • In a medium bowl mix the zest and juice of the lemon with the oregano, season and add the pork, set aside
  • Boil the potatoes for 10 mins or until tender, drain and cool
  • Pre-heat the grill to moderate
  • Drain and discard the marinade thread the pork and veggie onto the skewers and brush with oil
  • Transfer onto the grill for 10 mins turning regularly until golden brown all over
  • In a large bowl mix the tzatziki with the new potatoes, spoon onto 4 serving plates with the skewers
  • Sprinkle with the mint and cut the remaining lemon into wedges to serve.
