Caribbean Jerk Style Steak

Prep Time: 15 Minutes

Cook Time: 5 - 12 Minutes

For Rare: 2 & 1/2 mins each side

For Medium: 4 mins each side

For Well Done: 6 mins each side


  • 4 Rump, Sirloin or Minute Steaks

For the Marinade:

  • 2 Green chillies, deseeded and roughly chopped
  • 2 Spring onions, roughly chopped
  • 2 Garlic cloves, peeled and roughly chopped
  • 1 tsp Ground all spice
  • 1 tbsp Fresh thyme leaves
  • 2 tbsp Dark rum
  • 1/2 tsp Ground cinnamon
  • 1 tsp Caster sugar
  • 2 tbsp Light soy sauce


  • Place the marinade ingredients into a food processor or blender and whizz together to form a smooth paste.
  • Spoon the marinade into a shallow dish and coat the steaks on both sides.  Cover and marinate in the fridge for at least an hour, or overnight for extra flavour.
  • Cook the steaks according to your preference, on a prepared BBQ or pre-heated grill.  Remember to reduce the cooking time if using minute steaks as these will cook quicker that the thicker rumps and sirloins.
  • Serve the steaks with a pasta salad and crusty bread.
