Easy Leftover Veg & Beef Stew

Serves: 6 people

Ingredients

  • 500g cheap beef cut (chuck or shin), diced

  • Leftover vegetables, chopped

  • 1 onion and 2 cloves garlic

  • 1 tbsp tomato purée

  • 1 litre beef stock

  • 1 tsp dried herbs

Method

  • Brown the beef (optional).

  • Add all ingredients to a slow cooker.

  • Cook on low for 7–8 hours.

  • Season and serve with mash or crusty bread.
