Kiev Beef Burgers

Serves: 4 people


  • 450g beef mince
  • Freshly milled black pepper
  • 1 small courgette, coarsely grated

For the Garlic Butter

  • 75g Salted Butter, slightly softened
  • 2 Garlic cloves, peeled and finely chopped or crushed
  • 1-2 tbsp freshly chopped flat leave parsley or chives


  • To prepare the garlic butter; in a small bowl mix together all the ingredients.


  • Mold the butter into a cylinder shape the diameter of a 2 pence coin.  Wrap in foil and freeze for up to 2 hours.


  • In a large bowl mix the burger ingredients together.  Using slightly damp hands shape the mixture into 8 x 9cm burgers.  Cut the butter into 4 x 1cm discs. Place a disc in the center of 4 of the burgers, position the remaining burgers on top and continue to mold into a burger shape so that the butter discs are hidden in the center. Cover and chill for at least 20 mins.


  • Cook the burgers on a pre-heated moderate grill or BBQ for 5-8 mins each side, until any meat juices run clear.


  • Serve the burgers in a bun or with flat breads, a crisp green salad.


Any remaining garlic butter can be frozen and used to flavour butter on lamb or beef steaks and joints.  The burgers can also be made ahead and kept chilled over night or frozen for future use.
